Autumn Comfort Food Recipe – Pumpkin Masala

In UAE there are just 2 seasons. Burning (aka summer) and winter 💕. Since I moved to the States I kept reading about spring first, then the “pleasant weather” during summer, experienced monsoon and hurricane season myself and then came autumn with all it’s hype!!

Everything around me turned orange and I fell in love with it!! Now even before I came here, I loved my PSL. But since fall came, everywhere I look I can find something pumpkin spice flavored (and I’m not complaining lol!!)

Not to mention the abundance of pumpkins around me!! Honestly speaking I loved it when my mom cooked pumpkin ki sabzi at home but had no idea that pumpkins are a fall produce (every fruit and vegetable being available in Dubai all year round!!)

So this fall I decided to make one of my favorite comfort food during it’s prime season!! 🎃 It’s sweet and tangy and pairs perfectly with garam garam roti! I’m feeling autumn vibes now!!!

Here’s the recipe:

1 small pumpkin, peeled and cut into cubes

1 tbsp Ginger garlic paste

1 tsp Nigella seeds (Kalonji)

1 tsp Mustard seeds

1 tsp Cumin seeds (Zeera)

1 tsp Fenugreek seeds (Methi dana)

3-4 Whole red chilies

2 tsps red chili powder

1/2 tsp turmeric powder

3 tsps coriander powder

1 chicken stock cube

1 raw mango chopped

 

Method:

Add mustard seeds, fenugreek seeds, cumin, nigella seeds, and whole red chilies to oil and fry until they start sputtering. Now add the ginger garlic paste and fry for a few seconds and add the pumpkin, raw mango, stock cube, and all the spices. Stir for some time, then add a cup of water, cover and let the pumpkin cook and soften. Once the pumpkin is cooked thoroughly and become a mash-like consistency and the water has dried switch off the flame.

 

Serve topped with fresh coriander and mint and with hot naans!!

    Have no specific such food for a particular season! In shaa allah will try your recipe and see if I am gonna follow any such food for particular season

    There are different types of pumpkins – some are not sweet and some are very sweet. I wonder which one you used for this recipe?
